1)Les Ronces Sour blonde ale with boysenberries aged in oak barrels
The boysenberries impart a reddish-purple hue to the oak-aged ale and their sweet-tart flavor profile complements the sour blonde base in a light jammy, puckering and refreshing fashion.
2) Sour in the Rye – Sour rye ale aged in oak barrels with peaches
The combination complements the rye spice notes of the base beer, all while basking in careful balance with the honey, vanilla, and woody character imparted from barrel-aging.
3) Spontanaheim – Spontaneously fermented sour blonde ale aged in oak barrels
Brewed using traditional Belgian methods of turbid mashing and spontaneous fermentation, with the wild winds of Anaheim imparting unique flavors. After 18-24 months of aging in the Puncheon Pyramid, tasted and hand-selected their favorite barrels, which were then masterfully blended to taste. Funky, complex, tart, and crisp — made only for the most avid enthusiasts.
4) Castle Magic – Wine/Beer Hybrid
Castle Magic is an ale brewed with Tempranillo Grapes using the Pied de Cuve method. A cross between native and spontaneous fermentation – essentially the sourdough starter method of fermentation. The resulting ale is a grape forward ale that blurs the lines of beer and wine.
5) Soie (2020) – Barrel Aged Old Ale
Crafted using the solera method, which blends a portion of all the prior year’s productions, it gains layers and complexity with each vintage. Celebrate silky notes of toffee, caramel, dark fruit, vanilla, and oak. These select barrels earned an additional kiss of wood with a second aging in Madeira Barrels.
6) Sorry, Not Sorry – Bourbon barrel-aged imperial stout with peanuts, salt, cocoa powder, and cacao nibs
A big, villainous bourbon barrel-aged imperial stout sets the stage for a treatment of unapologetic proportions, including peanuts, salt, and a variety of decadent chocolate. Full-bodied, chewy, and delectable, this stout delivers a criminal amount of peanut butter cup character.
7) Fly Me to the Moon Pie – Bourbon barrel-aged stout with graham crackers, cacao nibs, marshmallows, and Tahitian vanilla beans
Inspired by childhood memories and nostalgic desserts, we let taste guide the way in the crafting of this liquid treat. This bourbon barrel-aged stout was treated with choice graham cracker, decadent cacao nibs, marshmallows, and hand-processed Tahitian vanilla beans, resulting in a decidedly rich treat of a beer.
